Avocado Apocolypse?! // RECIPE: Mockamole, Peas! {Guacamole alternative}

Avocado Apocalypse?! Yes, it's true, one of the TRENDIEST FOODS right now, {and a FAVE food of mine}, is now on its way to becoming a rare commodity. 

Avocado prices have DOUBLED due to WORLDWIDE shortages!!
Apparently, Americans are not the only AVOCADO ADDICTS. ;-)  

A Bloomberg survey found that a 10-kg box of Hass Avocados costs $28 up from $14 last year (wholesale). Mexico supplies 82% of the U.S.' avocados and California provides the rest, but BOTH sources are in jeopardy. 

WHY? The cause is two-fold. One being climate-related - the water drought in California and hotter climates around the globe. Two is political - the workers in Mexico are striking. 

In the meantime, until our avocado supply is back in abundance, here's a suggestion for a POPULAR avocado-based recipe - GUACAMOLE - just in time for CINCO DE MAYO!!! FUN FACT: It's a grrreat source o' protein (from the peas).

RECIPE: Mockamole, Peas! (Guacamole made w/peas)

Ingredients:1 Cup Sweet Peas (frozen> thawed>drained)

1 Chopped Onion *organic
1 Clove Garlic *organic
1 Chopped Tomato *organic
1/2 Cup Chopped Cilantro
1 Tablespoon Lemon/Lime Juice *I like to squeeze it from said lemon/lime wedge
1 Tablespoon EVOO (extra virgin olive oil)
Sprinkle Salt 'n' Pepper *I like to use Pink Himalayan Sea Salt

Servings: 12 
Time: around 20 minutes 

Prep:
Easy PEAsy!
Combine the peas, tomato, cilantro, onion & garlic in a blender.
Blend until smooth. 
ADD lemon/lime juice & EVOO.
Blend again! 
Take a tastey taste, then season with salt & pepper 
Blend a wee bit more.
Pour into a bowl, cover & place in fridge to cool for 30 minutes. 
Serve with chips or mini pita pockets! 
ENJOY!!
