RECIPE: Zesty Zucchini Pancakes / Latkes {aka my ZCakes}

Just swap out potatoes for some lean green zucchini... and YES... they are fried in a skillet, but NO they don't have to be greasy! Just pat-a-cake, 
pat-a-cake... until your ZCakes are virtually greaseless! 

BTDubs, you don't have to be Jewish to make 'um... I'm a shiksa!

Ingredients:
~ 2 Zucchinis, grated
~ 1/2 Cup of Organic, Unbleached Flour
~ 2 Tablespoons of Red Onion, grated 
~ 2 Organic Eggs
~ 1 Teaspoon Baking Powder
~ 1 Teaspoon Sea Salt
~ 1/2 Teaspoon Black Pepper
~ Oil {Tigernut, Olive Oil}
Supplies:
~ Mixing Bowl
~ Skillet (10-12-inches)
~ Soup Spoon

Prep Time: 20 minutes
Cooking Time: 4 minutes
Serves:  approx. 10 3" pancakes

Directions:
1. Grate the zucchini into a large bowl. 
2. Dice the onion. 

  • 3. Stir the onion and onions into the bowl. 
  • 4. Stir in 1/2 cup of flour, baking powder, salt and pepper. 
  • 5. Heat a large frying pan, (10-12-inches), over a medium heat and pour 1/2 tablespoon or so of olive oil into the pan. When the oil is hot, lower the heat to a medium-low and drop a soup spoon of batter into the pan.
  • 6. Cook the pancakes about 2 minutes on each side, until brownish.
  • 7. Put the pancakes on a paper towel and pat dry. 
  • 8. Serve 'um up!

  • SIDES: I like mine with a dollop of organic sour cream... especially Organic Valley Sour Cream. OR if you prefer something sweet, go for organic unsweetened applesauce.

  • FUN FACT: Frying foods in oil is symbolic of the miracle of Hanukkah ~
    a 1 day supply of oil that kept the eternal flame in the Jewish Temple lit for 8 days!
