RECIPE: Egg Muffins {Gluten-Free}

Muffins that WON'T give you a muffin top!!! Whatcha think about 'dat?! 

A few weeks ago I tried my hand at a NEW breakfast recipe, inspired by similar ones I'd seen on Pinterest... Much to my surprise, they turned out perfectly the first time! SHAZAM!

These are GREAT to make over the weekend as breakfast to go for the whole week. Just grab 'n' go... to work... to school... wherever! Gluten-Free Peops, this is YOUR MUFFIN! 


~ Olive Oil
~ Olive Oil Spray 
~ 1 Package of Spinach {Organic}
~ 4 Eggs {Organic}
~ 1 Package of Mini-Bella Mushrooms OR 2 Peppers OR Another veggie of your choice
~ A pinch of Sea Salt and Pepper OR A pinch of Mrs. Dash 


~ Large Mixing Bowl
~ Large Frying Pan
~ 12 Muffin Pan
~ Whisk
~ Knife
~ Cutting Board

Total Time: 40 minutes
Serves: 12


1. Preheat oven to 375F.

2. Chop up mushrooms/peppers/other veggie.

3. Pour olive oil into a large frying pan and saute the mushrooms/peppers/other veggie until they're soft. Around 5-6 minutes. 

4. Put spinach in the same frying pan and add some water, around 1/4 cup. On medium heat, cook until wilted, around 3-4 minutes. Drain the excess water.

5. Whisk the eggs in a large mixing bowl. Then add the cooked mushrooms/peppers/other veggie and spinach. Mix, mix, mix! Season.

6. Spray the muffin pan, then pour in mix.

7. Bake for 20-25 minutes, or until a fork inserted into a muffin comes out clean as a whistle. 

8. Take them out of the oven and let them cool for a few minutes.
