RECIPE: Zesty Zucchini Pancakes / Latkes {aka my ZCakes}

A couple weeks ago I tweeted a picture of my zesty zucchini pancakes fresh off da griddle and have since received several requests for the recipe. So, here goes... 

The aforementioned zcakes! :p
~ 1/2 Cup of organic, unbleached flour
~ 2 Tablespoons of grated red onion
~ 2 Organic Eggs
~ 1 Teaspoon Baking Powder
~ 1 Teaspoon Sea Salt
~ 1/2 Teaspoon Black Pepper
~ Organic olive oil

~ Mixing Bowl
~ Frying pan (10-12-inches)
~ Soup Spoon

Prep Time: 20 minutes
Cooking Time: 4 minutes
Serves: 10 3" pancakes


  • 1. Grate the zucchini into a large bowl. 
  • 2. Dice the onion. 
  • 3. Stir the onion and onions into the bowl. 
  • 4. Stir in 1/2 cup of flour, baking powder, salt and pepper. 
  • 5. Heat a large frying pan, (10-12-inches), over a medium heat and pour 1/2 tablespoon or so of olive oil into the pan. When the oil is hot, lower the heat to a medium-low and drop a soup spoon of batter into the pan.
  • 6. Cook the pancakes about 2 minutes on each side, until brownish.
  • 7. Put the pancakes on a paper towel and pat dry. 
  • 8. Serve 'um up!
